Leftover Chicken Feet Hanging from an Overhead Conveyor
In this color image we see leftover chicken feet hanging from an overhead conveyor. On either side of the conveyor, and of course, the chicken feet, we see the 90' and 100' Barker single pass scalders*.
* Before plucking and after the birds have bled out, the birds are conveyed through water tanks filled with hot, scalding water, hence the name of the machine: scalder or scalding tank. The water is heated by heating elements and functions to open the pores to help loosen the feathers from the skin.
